Right, now we`re in for a festive treat…in the shape of our Christmas Kurgan…it is going live today so prepare yourselves for a seasonal slaying! We have roast turkey breast, pork and herb sausage (sourced from our local butcher…Andrew Reid), sage and onion stuffing (with more meat in it!!) and regally topped with our own red cabbage stuff…I don`t know what to call the red cabbage stuff but it`s basically a reduction and slow cook of the following ingredients…red cabbage, red onion, leek, red apple, brown sugar, red wine vinegar, cloves, cinnamon, bay and butter!! It will be served inside a toasted bagel so lets get ready to rock this Christmas time! Ho Ho Ho!

Well after feeling particularly unrefreshed by too little sleep, and a pleasantly brutal Monday, Tuesday`s delights bring in a new Kurgan…this time, a Mexican-style wrap…sliced smoked turkey, chargrilled chorizo, a rich tomato sauce (fresh plum tomatoes, mushrooms, chillies, garlic, onion, basil, oregano, and bacon), a layer of smoked cheddar, and a handful of kidney beans…warming and warming!

Sticking with the Far East, we have for this week`s Kurgan…roast chicken breast on an Asian salad (shredded cos, cucumber, carrot, and spring onion) dressed with soy sauce, lime, honey and garlic. The chicken is coated with satay (peanuts, garlic, ginger, toasted cumin seeds, toasted coriander seeds, fresh coriander, chillies and coconut milk and a splash more soy sauce). This is of course crammed into a bagel!! Then the whole lot is crammed into your stomachs! I defy you not to like this!
This is most definitely made with nuts! But so damn good…

Real tuna steak today for the Kurgan! Seared and then served on a bagel with a salsa verde (dijon, anchovy, flat leaf parsley, mint, basil tarragon, capers, seasoning and lemon juice). Maybe some cucumber and some cos thrown in as well!
